Greetings from Fresh Start Farms!

Fresh Start farmers’ fields are being tilled, seedlings are sprouting, and some farmers even have some crops ready to harvest. Sylvain’s bok choy (pictured right) is off to a great start and will be ready soon! 

This week we have a limited amount of greenhouse-grown heirloom tomatoes from Quebec. These beauties are the first taste of summer! 

Lots of new and restocked items to enjoy! A fresh batch of organic corn tortillas from Mi Tierra just arrived. Made with just corn, water and lime, these tortillas are fresh-baked and all local made with non-GMO corn grown on small farms throughout western MA. This week they will arrive fresh, after that they will be frozen. Don’t miss them — put tacos on the menu this week! Grab some watermelon radishes, red onions, and cabbage and make these shrimp tacos with watermelon radish and jicama slaw.  

100% Grass-fed Sirloin Steak new from Big Picture Beef, along with greens, tomato, and cheese would  be perfect for a Balsamic Steak Salad. All new from VT Bean Crafters, Hummingbird Nuggets are vegan nuggets ready to cook! Plus, new from Bell & Goose — Camembert Cubs, ready to pair with a Jan’s Farmhouse Crisp cracker and Short Creek salami.

This baked pasta is inspired by spanakopita and combines pasta with gooey mozzarella, briny feta, plenty of greens and a rich cream sauce. The key to this dish is in the greens: Use at least three kinds — a mellow one like spinach or swiss chard, a peppery one like arugula or mustard greens, and a fresh herb or two — to create an exciting mix of flavors.
