Greetings from Fresh Start Farms!

Strawberries are here! It’s the time of year many of us wait for when those delicious red berries ripen in the fields. Applecrest Farm in Hampton Falls is picking them the very day they get into your box! There is a chance that if there is very bad weather this weekend, the berries could be damaged in the fields and we may not have them for your box. If that happens, you’ll be credited. Local strawberries will only last for a week or 2 more, so make sure to enjoy lots of them now!

Fresh Start Farmers are hard at work on the new land in Boscawen (pictured below).  The farmers are excited to have additional land to be growing on this season.  In addition to more growing space, the Boscawen farm has three acres of blueberry bushes. We’ll be offering pick-your-own blueberries this season and they should be ready in just 2 to 3 more weeks. We’ll be sharing more info soon!

Celebrating World Refugee Day

A high school student from Manchester, Aaron Joy, and his nonprofit, Uplift and are putting on a World Refugee Celebration at the Center for New Americans on Saturday 6/25 from 5:30 to 8pm. The event is free and there will be free food, speakers, music and other performances. The event is open to everyone!

of the Week

Polish Chilled Beet Soup (Chlodnik)
  • 1 3/4 lb red beets, peeled and thinly sliced
  • 1/4 cup cider vinegar
  • kosher salt and ground black pepper
  • 1 bunch radishes grated
  • 1 small English cucumber, halved, seeded, and grated
  • 3/4 cup drained, sliced pickled beets, finely chopped, plus 1/4 cup picked beet juice
  • 3 tbsp plus 1/4 cup fresh dill leaves, chopped
  • 5 tbsp lemon juice
  • 2 cups ice
  • Plain whole-milk yogurt or sour cream to serve
  • 1/4 cup chopped fresh chives

 

  1. Bring 2 quarts of water, the beets, vinegar, 2 tbsp salt, 1/2 tsp pepper to a boil in a large pot on medium-high heat. Cook at a vigorous simmer until the beets are tender, 30-60 minutes. Remove from heat and let cool for 15 minutes.
  2. While the beets cook, wrap the radishes and cucumber in a kitchen towel and wring out their moisture. In a medium bowl stir them together with pickled beets, 3 tbsp dill, 2 tbsp lemon juice, 1/2 tsp salt, and 1/4 tsp pepper. 
  3. Add half f the cooked beets to a blender, along with 1 cup of their cooking liquid, 1/2 cup of the picked beet mixture, and half of the ice. Puree until smooth. Transfer to a bowl and repeat with remaining cooked beets. 
  4. Add 1 cup of the remaining beet cooking liquid, the pickled beet juice, and 1/4 tsp pepper. Stir to combine, then taste and season with salt.
  5. Serve and garnish with a spoonful of yogurt and remaining pickled beet mixture. Sprinkle with the remaining 1/4 cup dill, chives, and pepper. Recipe from Boston Globe
