The farms are flourishing. Thanks to some much-needed rain the zucchini, summer squash, and cucumbers are peaking out from under every vine. Green bean harvests are increasing and this week is the first harvest of potatoes and cauliflower! The greenhouses have some beautiful green tomatoes getting ready to make the transition to red.

Get out on the farm this summer and pick some delicious blueberries! Fresh Start Farm’s newest farm site in Boscawen has 3 acres of blueberry bushes and they are sweet and ready for the picking. Located at 148 Corn Hill Rd in Boscawen and open daily from 7am to 7pm.

Enjoy a beautiful floral bouquet grown and arranged by Fresh Start Farmer, Harimaya Adhikari! Hari loves to grow and arrange flowers, play with colors in bouquets, and share her creations with others. During this 9-week share, you’ll get a gorgeous, unique arrangement of fresh-picked flowers from Hari’s plot in Boscawen. Look forward to zinnias, sunflowers, cosmos, amaranth, celosia, dahlias, ranunculus, snapdragons, lilies, strawflowers, marigolds, and more! Have you tried Amaranth greens yet?
Amaranth leaves are eaten all over the world particularly in Africa, Asia, and the Caribbean. Many of the Fresh Start Farmers grow lots and lots of amaranth, providing their community with access to this difficult to find green here in the north east. If you haven’t tried it yet, its a delicious green and its not hard to see why its so popular worldwide.
Amaranth is a powerhouse of nutrients. The most common recipe (like any leafy green) is to heat some oil, add chopped onion and garlic, salt, and the greens and stir fry to wilt them, add some sort of chili, then add a little acid (citrus or vinegar) and black pepper at the end. There’s a lot more ways to eat amaranth and one of the most popular way the Fresh Start Farmers suggest is to try it in a stew with onions and tomatoes and add fish or meat to make it a full meal.
