Summer Youth Programs are off and running at ORIS!
The summer youth programs gather new American youth  (all are welcome!) to read and play games that build their English language and literacy skills as they prepare for their next school year. During the sessions, staff and volunteers engage with the youth through games and books to work on language development. Staff also work to mentor older youth as they pursue job opportunities, explore college and educational options, and study for driving or citizenship exams. The Manchester Summer Youth Program is run in partnership with Safari Youth Club and New American Scholars.  If you or anyone you know is interested please reach out to Carolyn Musyimi-Kamau at 781-985-8340.

Recipes

of the Week

Have you tried Amaranth greens yet?

Amaranth leaves are eaten all over the world particularly in Africa, Asia, and the Caribbean. Many of the Fresh Start Farmers grow lots and lots of amaranth, providing their community with access to this difficult to find green here in the north east. If you haven’t tried it yet, its a delicious green and its not hard to see why its so popular worldwide.

Amaranth is a powerhouse of nutrients. The most common recipe (like any leafy green) is to heat some oil, add chopped onion and garlic, salt, and the greens  and stir fry to wilt them, add some sort of chili, then add a little acid (citrus or vinegar) and black pepper at the end. There’s a lot more ways to eat amaranth and one of the most popular way the Fresh Start Farmers suggest is to try it in a stew with onions and tomatoes and add fish or meat to make it a full meal. Here are some other preparation ideas:

Or just add it in to any recipe you would use spinach or dark green!
